Chocolate Coconut Truffles
Okay, I actually ended up liking these more than I thought I would. I am not the biggest coconut fan, but recently have been really into it so I decided to try these and ended up loving them.

1/3 Cup coconut butter or coconut manna (NOT COCONUT OIL)
2/3 Cup + 2 Tbsp shredded unsweetened coconut
2 Tbsp agave nectar
Place chocolate in a microwave safe bowl and microwave for 15 second increments, stirring between until chocolate is melted. Set aside to cool (important, because you don’t want the chocolate to melt the coconut)
If your coconut butter is completely solid, microwave it till it softens slightly. If you’re using coconut manna (like I did), then the consistency should be good to go. Stir in 2/3 Cup shredded coconut and agave syrup. If the mixture is too loose to form into balls, place in freezer for 2 mins for it to harden a bit. If the mixture is too warm, it won't hold its shape.
Dip each truffle into COOLED melted chocolate until entire ball is covered. You can use a small fork to help. Let excess chocolate drop off and place chocolate covered ball on a nonstick surface, such as wax paper. Sprinkle top with extra coconut and store in the fridge for around 10 minutes.
