Cinnamon Zucchini Muffins
Super happy with the way these turned out! They were super moist and tasted like cinnamon. You couldn’t really taste the zucchini, which I’m not sure if its a good or bad thing!!

1 1/2 white flour (180g)
1/2 tsp baking soda
1/2 tsp cinnamon
1/3 cup + 2 tbsp sugar (65g)
OPTIONAL: 1/2 cup chocolate chips
1/2 cup applesauce (120g)
1/3 cup vegetable oil (70g)
1 tsp apple cider vinegar (5g)
1 1/2 tsp pure vanilla extract (6g)
1 cup grated zucchini (mine was shredded)
Zucchini Muffins Recipe: Preheat oven to 350°F (180°C or 3/4 on a gas oven) and place 10-12 cupcake liners in a muffin tin. Combine all dry ingredients in a mixing bowl, then set aside. Combine all liquid ingredients (including zucchini) and set aside. Mix wet into dry, and immediately portion into the baking cups and place in the oven. Bake till golden brown. Enjoy!
