Energy Balls
Finally found my favorite energy ball recipe! I actually got this recipe from a cooking related senior project I attended last year. The girls gave it out during their presentation session and I really liked it so I got the recipe and made it on my own! It’s super easy to make too, just add everything into a blender or food processor, blend then roll into balls and chill in the fridge.
*the original recipe used honey, but since I’m making it vegan, I substituted it with agave nectar (or you could even try maple syrup)
INGREDIENTS
100g oats
100ml vegetable oil
50g cocoa powder
100g grated coconut + extra for coating
1 tsp agave nectar
2 tsp water
10 pitted dates
Add all ingredients into a blender and blend. Add an additional amount of water (1 tsp at a time) until the mixture can be rolled.
Roll into small balls and coat in more grated coconut.
** I did not have extra grated coconut so I skipped the coating this time, but feel free to do it!
