Banana Bread

This banana bread has got to be one of my faves! It’s my favorite banana bread recipe (ever!). The banana “bread” we usually resembles a cake, so it’s hard to call it banana “bread”. and this recipe is VEGAN! I modified it slightly from Katie’s recipe, which by the way is my go to website for vegan recipes! She makes the best cakes!

Here is the exact recipe I used, with my modifications.


  • 1/2 Cup vegetable oil

  • 1 Cup brown sugar

  • 2 chia eggs (2 tbsp chia seeds + 6 tbsp warm water)

  • 1 tsp vanilla

  • 2 large mashed ripe bananas

  • 1 Tbsp soy milk

  • 1 1/2 cup flour

  • 3 tsp baking powder

  • 1 tsp cinnamon


Preheat oven to 350 and lightly grease a cake or loaf pan. 

In a small bowl or cup, combine chia & warm water, stir and set aside at least 5 mins for chia to absorb water.

Mash ripe bananas, set aside. Combine oil & sugar. Once combined, add chia egg, vanilla, mashed bananas and continue mixing.

Combine dry ingredients in a separate bowl and whisk with a fork to remove any lumps. Slowly combine dry ingredients with wet, until just combined. Do not over mix.

Place batter into pan and bake at 350°F or 180°C (or if you have a gas oven like me, set the mark to 3 or 4) for 30-35 mins or until center is no longer runny.
