Black Bean Brownies

To be honest, I was super excited to try these! It used black beans, something I had never used in baking. This was also made in a food processer or a blender which was new for me as I’ve always used an electric mixer or made it in a bowl and whisked it by hand. Taste-wise, it was a little bitter and too soft for me but I couldn’t taste the beans at all!
1 and 3/4 cups cooked black beans
2 large chia eggs (16g chia + 6 Tbsp (90 ml) water)
45 g vegetable oil
72 g cocoa powder
1 tsp pure vanilla extract
105 g brown sugar
1 1/2 tsp baking powder
Preheat oven to 350°F (176°C).
Grease a brownie tray or line with parchment paper
Prepare chia egg by combining chia and water in a separate bowl.
Add remaining ingredients to a food processor or blender and mix - about 3 minutes - scraping down sides as needed. You want it pretty smooth.
If the batter appears too thick, add a Tbsp or two of water and pulse again. It should be slightly less thick than chocolate frosting but nowhere close to runny.
Spread into prepared pan and bake until firm. It will come out a little gooey and runny but it is okay as it will harden up when cooled.
