Chocolate Chip Cookies

Finding this recipe last minute may have been the best decision! After realizing that my previous recipe required coconut oil and realizing last minute that I didn’t have enough, I searched for a new chocolate chip cookie recipe and decided to try this one out.

The amazing thing about this recipe is that it doesn’t make that many cookies. Most of the time, I bake too much and the rest of the food goes to waste. But this recipe yield around 12-16 cookies which makes it perfect for a family of 6 to last around 2-3 days.

This was a one-bowl recipe and was honestly so easy to make! This was my first time trying vegan chocolate chip cookies and I am so happy with it!

Ingredients

  • 1 cup plain flour

  • 1/2 tsp baking soda

  • 1/4 cup white sugar

  • 1/4 cup brown sugar

  • 1/3 cup vegan chocolate chips

  • 2 tbsp milk coconut milk

  • 2 tbsp vegetable oil

Directions

Preheat oven to 325°F (160°C). Combine all dry ingredients in a bowl, then stir in wet to form a dough – it will be dry at first, so keep stirring until a cookie-dough texture is achieved. If needed, add 1-2 tbsp extra milk of choice. Form dough balls, and place on a greased baking tray, leaving enough room between cookies for them to spread. FLATTEN the tops slightly as the cookies don’t flatten very much on their own. Bake 10-ish minutes or until golden.
