Chocolate Coconut Ice Cream
This was a great treat to have post wisdom tooth surgery. The coconut milk gives it such a thick and creamy texture and the hint of cocoa powder gives it a slight chocolatey coffee cream taste (idk why I tasted coffee but i did!). I really didn’t follow the recipe, just got inspiration from it. I was kinda tired and didn’t really feel like following a recipe, plus It was super easy as ice cream is ice cream and no matter what you add it’ll still taste good (hopefully!).

1 can coconut milk (thicker kind)
2 tsp cocoa powder (I didn’t measure, just eyeballed it)
2 tsp sugar (again, just eyeballed it)
In a freezed ice cream bowl, pour the coconut milk and whisk it (I did it by hand) for around 2 minutes until you can feel it starting to thicken. Add the sugar and whisk. Then add the cocoa powder and keep whisking until you reach your desired consistency. This ends up becoming soft serve, but if you want a harder texture, pour it into a container and freeze for a few hours.
