Date Sweetened Chocolate Cupcakes
This turned out to be more dense and resembled more of a muffin, but regardless it still tasted very good! The dates provided just the right amount of sweetness and overall this was super easy to make, as you just throw everything into a blender or food processor!

1 cup dates
1 1/4 cup water
1 Tbsp baking powder (yes, you read that right!)
1/3 cup cacao powder
1 cup all purpose flour
1 ripe avocado
1/4 cup oat milk
2-3 Tbsp agave nectar
2 Tbsp cacao powder

Preheat your oven to 350F or 180C. Line a muffin pan with liners. In a food processor (or blender), blend together the dates and water. Add in the remaining cake ingredients, and pour the batter into the muffin liners. Bake the cupcakes for 20 minutes. While the cupcakes are cooling, blend together the frosting ingredients in a food processor until smooth. Enjoy!
