Sweet Potato Brownies
MY FAVORITE BROWNIES SO FAR! I decided to make these last minute and it turned out to be a very very good decision!

There is peanut butter, which concerned me a little as I didn’t want my brownies tasting like peanut butter. When you first bite into it, you do get a hint of peanut butter but then it disappears and just tastes like a regular brownie. The consistency is also amazing (it looks very hard and firm before baking but after baking the texture is amazing). My parents loved it, and didn’t even know it contained sweet potato! My siblings, who are pretty picky eaters, loved it too!
3/4 cup sweet potato puree
1 cup peanut butter
1/4 cup + 2 tbsp plain flour
2/3 cup white sugar
1/4 cup + 2 tbsp cocoa powder
1 1/2 tsp baking soda
Preheat oven to 325°F (160°C). Line an 8-inch pan with parchment paper or grease well. Gently heat your nut butter until easily stir-able. Then whisk it together with the sweet potato and vanilla extract in a large bowl.
In a separate bowl, stir together all remaining ingredients – make sure that baking soda is evenly incorporated! Pour dry into wet (not the other way around), and smooth into the prepared pan.
Bake on the center oven rack 20 minutes. It will look a little underdone, but it firms up as it cools.
