Super happy with the way this turned out! The texture was amazing and taste wise it was pretty decent. I didn’t frost it because we didn’t have the ingredients for the frosting! It definetly turned out better than the ones I made previously.

  • 1 and 3/4 cups (220g) All-Purpose Flour

  • 1 cup (200g) Sugar

  • 1 tsp Baking Soda

  • 1/4 tsp salt

  • 1 cup (240ml) Soy Milk (or other non-dairy milk)

  • 2 tsp Vanilla Extract

  • 1/3 cup (80ml) Vegetable Oil

  • 1 Tbsp Apple Cider Vinegar

Preheat the oven to 350°F (180°C)

  1. Sift the flour, sugar, baking soda and salt into a mixing bowl.

  2. Add the milk, vanilla, oil and vinegar and give it a quick whisk with a hand whisk until just combined. Whisk wet ingredients into dry.

  3. Divide the batter evenly between two mini cake pans.

  4. Bake for 30 minutes.

  5. Remove from the oven and using a toothpick, insert into the center of the cake. If it comes out clean then your cake is done.

  6. Move to a cooling rack to cool completely.
