Vegan Coconut Buttercream
One of my favorite frostings! I’m so glad I tried this because it was honestly super easy to make and the texture + taste are amazing!

1/4 cup coconut butter (I used coconut manna, which you can find at most grocery or health food stores in HK)
1-2 cups powdered sugar (add slowly, not all at once)
soy milk or other plant-based milk (amount depends on how you want the texture to be)
In a stand mixer with a paddle attachment OR a hand mixer, pour in the coconut butter (or oil, but I’m not sure if it would yield the same results). Add in powdered sugar 1/4 cup at the time and mix on medium speed until you have the right consistency. If the frosting looks too thick, add a little bit of soy milk or other plant based milk. If it is too runny, add more powdered sugar.
