Sugar Cookies #2
Since my cookies in the last post turned out so well, I decided to modify the recipe and try sugar cookies again after many failed trials! All I did was substitute the cocoa powder with more all purpose flour and it made such a good sugar cookie. The tricky thing about these cookies is the baking time, because they’re so chewy in the middle but if you over-bake them, they become rock hard.
If you want to make Snickerdoodles, make a cinnamon sugar mixture and roll the cookie balls in it just before baking. They turn out amazing as well!
3/4 cup oil (i used olive oil)
2 cups sugar
2 tsp vanilla extract
1 tpsb ground flax seeds (i used milled chia seeds)
1/2 cup soy milk (i used oat milk)
2 and 3/4 cups flour (i used all purpose)
1 tsp baking powder
FOR SNICKERDOODLES: Mix 1 tsp cinnamon + 1 tbsp white sugar in a bowl. Roll cookies into small balls, then dip into sugar mixture and bake!
preheat oven to 180°C
add flax & milk together and stir (set aside)
sift flour, baking powder and salt
cream sugar and oil
add milk mixture to the sugar/oil
add dry ingredients in 3 parts and stir. add chocolate chips.
roll dough into balls and flatten before baking
bake for approx. 10-15 minutes
