Vegan Chocolate Buttercream

This recipe made a ganache, but I turned it into a frosting by adding powdered sugar! The original frosting recipe is part of a brownie recipe. I did not make the brownies, but decided to use this frosting recipe as I thought it looked good and I had the ingredients on hand.

INGREDIENTS

For the Frosting:

  • 1/3 cup cocoa powder

  • 1/2 cup water

  • 1/4 cup maple syrup

  • 1 tablespoon granulated sugar

  • 1 tablespoon powdered sugar

  • 1 tablespoon coconut oil

  • 1-2 cups powdered sugar (add slowly)

  • Soy milk or other plant based milk (amount depends on what texture you want)

To Make the Frosting:

  1. Combine all ingredients (EXCEPT POWDERED SUGAR) in a small saucepan over medium heat. Whisk together while mixture starts to thicken and slightly bubble, this should take about 4-5 minutes. Reduce heat to low and continue whisking for another 2-3 minutes, or until frosting is thick.

  2. Let the saucepan cool for 10 minutes off heat

  3. Transfer ganache into a stand mixer fitted with a paddle attachment (you can also use a hand mixer). Add the powdered sugar 1/4 cup at the time until you get your desired consistency. If the frosting is too thick, add a bit of soy or plant-based milk. If it is too runny, add more powdered sugar.
